I have been trying new healthy recipies on my family lately. I'm a little tired of the same old mac and cheese, chicken nuggets, hamburgers and pizza my kids would eat everyday if they could..
With America realizing the increase in health issues, I am trying to move to a more healthy lifestyle. Here are three of my family's favorite recipes.
Chicken quesadillas
4 chicken breasts chopped into small pieces
1/2 Green pepper chopped
1/2 red pepper chopped
1/2 small onion chopped
4 cloves garlic minced
organic taco seasoning
olive oil
8 sprouted tortillas
garlic powder
1/2 package cream cheese
colby jack cheese shredded about 1-2 cups
Side of guacamole ( 1 avacado, 1 heaping tsp sour cream 2 cloves garlic s/p blended)
Saute chicken in olive oil and taco seasoning til cooked through about 6-8 minutes.
Remove from pan. Saute peppers, onions, garlic and more seasoning (1tsp) in olive oil til softened. Mix in chicken to reaheat and mix flavors.
Brush olive oil and sprinkle garlic powder on bottom of tortilla and place on baking sheet or stone. Spoon chicken mixture onto tortilla and spread around. Mix cream cheese with 1 tbls of taco seasoning and then place dollops randomly over chicken mixture. Then sprinkle a little shredded cheese on top just to cover. Put tortilla on top and brush olive oil and garlic powder on top. Put in the oven for 15 minutes til cheese melts. Makes about 3-4 quesadillas.
Bow tie Pasta
8 oz spelt or whole wheat pasta bows(Farfalle)
1 bag california mix veggies ( broccoli, carrots, cauliflower)
1 can black beans or edamame (soybeans)or both
2 tbls organic honey mustard dressing
2 tbls soy mayo
6 cloves of garlic minced
1 tbls Italian or Asian seasoning
Cook pasta according to box instructions. Steam veggies and beans in microwave or stovetop pan. Mix honey mustard,soy mayo, garlic,and seasoning together in a bowl. Mix all ingredients together and serve. You can use ranch dressing instead of honeymustard and mayo if desired. MY family likes honey mustard.
Strawberry Spinach Salad
1 pkg spring mix
1/2 package raw baby spinach
toasted walnuts or almonds (toast in toaster oven) 4-5 minutes
6-8 strawberries cut in slices
1 pkg frozen edamame beans
Rasberry pecan dressing (Kens Steak House)
mix greens together, top with remaining ingredients.
Carrot Juice
Juice together in Juicer:
5-6 carrots
1/2 small lime
1/2 small pineapple
1/4 red pepper
1 beet with greens
makes 10 servings of veggies per glass!
